In the beginning, both players have one big pawn island each as all the pawns are connected together. Once exchanges of some pawns happen, that one big pawn island gets broken down into two or more pawns islands and potential weaknesses are created. As a rule in general, it's better to have less pawn islands as this would indicate that your pawn structure is more healthy in general.
